My Command Center


My Command Center.  I did not create this term--my little brother, Andy, gets credit for the title.  My mom has a place in her house that is where she sits with her coffee and her computer, a blanket, a dog or 2, and settles in.  He calls it her Command Center. I have one of those places as well, and the red couch is it.

I start my day here, and usually end it here, too.  I plan things, plan to create things, drink coffee, facebook, email, and sometimes even just sit and listen to music.

My favorite "Command Center" activity: drinking coffee. 

I leave my pile of magazines in this spot, and use it to rip out inspiration.  I write down or "pin" new recipes here, and review my week's itinerary.  It is one of my favorite spots in the house.

Williamsburg Mini Trip

Williamsburg, VA in only about 40 miles away from our house.  I, however, have never been, and needed a little getaway with the kids to just relax and get away from the routine of life.

We packed a few changes of clothes, filled a big rubbermaid container with games, legos, characters for Soleil, cards, and art supplies.  I also packed a bag with snacks and drinks, and sought out a deal on priceline.  My kids LOVE hotels, and it really didn't matter where we stayed, but we ended up lucking out big time...

We booked the Historic Powhatan Resort for about $80 total per night.  We headed northward, and since it was raining hard, and it was Friday, it took us about an hour and half to get through the tunnel to Williamsburg.  The kids were amazing, and didn't care... they had a huge snack bag, and I gave in, and threw in a movie in the car's DVD player.



We finally arrived to the hotel and pulled in to this beautiful resort.  The units are like little town houses, 4 in a row.  We had an upper level, which consisted of a living room, bedroom with king size bed and bathroom, an additional bathroom and a small, well thought out kitchen.  It also had another set of stairs within the unit (steep, but carpeted) that led up to another small room that had 2 twin beds in it!!  We were just expecting a standard hotel room, and got so much more!

And then we drove around the resort.  There was an indoor pool, with 2 hot tubs, recreation room with scheduled activities, a nice restaurant, tennis courts (you could check out equipment on site), good playground, and mini golf!! We hit the jackpot.

I didn't turn on the computer all weekend.  We played games, the kids played nicely, we had no other responsibilities and it was DELIGHTFUL.  Phase 10 is a great game, and Soleil will play forever with little characters.


 We did go into Colonial Williamsburg, which to be honest, is not interesting to little kids.  They did love the gardens behind the historical buildings, and we played there in the beautiful VA sun.  We tried "Queen's Cake" from the bakeshop--it was horrible.  We joked and said that it must have been baked in the 1700s.

Costco and Lemons!

We recently went with another family to Costco.  Being a small family, it always seemed like a waste to me--we barely get through the food we buy at the grocery store, so larger quantites seem like way too much.  However, when we split a few items, like the big carton of meyer lemons that they had there, it makes sense.  And I love meyer lemons!!

If you are regular reader, you will know that Soleil LOVES making lemon bars.  (Don't promise the girl that you will make them on a particular day.  She will remind you and remind you and remind you, much like a cat who has run out of catfood!!)
A friend of mine gave the greatest idea:  grate the zest and juice the lemons and FREEZE IT!!  I used little ice cube containers (from ikea) to freeze the juice, and froze the zest separately.  Now I have it in small quantities whenever I need it!
 I put some of the zest in the shortbread part of the recipe AND some in the curd portion.  They were VERY lemony.  (Paul thought they weren't sweet enough, while I thought they were perfect.)   I used Bakerella's recipe, using white sugar instead of powdered, because I was out of the latter.

Love with Food

For Christmas, my BFF and longest childhood friend, Claudia and I gave each other these fun snack box subscriptions.  This one is called"Love with Food", and it comes with a lot of many unique snacks.  The best part is that they donate a portion of the cost to fun one meal to someone in need.  

Soleil wanted to try every snack.  She had so much fun with this, that I felt guilty if I tried a snack without her. When the box was empty, I had to refill it with small snacks I already had in the pantry (goldfish crackers, peanut butter crackers, fruit cups, etc.)   She pulls the box out whenever she is hungry!
 

My favorite was the Banana Split Baby Mama Drama from Mama's Magic Mix.  It was comprised of these caramel puffs and freeze dried fruit and nuts and was soooo good!

Claudia and I also ordered "Nature Box" for each other, and I haven't received that one yet, but I can't wait!

Buy your train tickets ahead if you can.
Don't forget to buy your Oyster Card (if going to London) at the bigger tube stations.
Eat Fruits and Veg
Drink Lots of Water
Book your hotel the night you return--you WILL be too tired to drive.
Go overseas in Early December--you get the Christmas without the crowd.
Another great time is in November--no crowd at Eurodisney, avoid travel on US Thanksgiving
Bring a collapsable bag for Shopping.
Bring Benedryl, ibruprofen, peptobismol, vicks baby rub (coat inside of nose with this, as you travel.)

Starting my Business

I have been working on a business plan for about 2 years.  Actually, I have been working on it longer than that, if you count the time spent daydreaming about future plans that have bubbling within forever.  I knew I couldn't really do anything until we stopped MOVING. That is finally coming to an end this summer, and I am so excited!!

Planning, planning, planning.

Because I couldn't start my own business, I channeled that energy into helping other small businesses.  I really love helping others make their dreams come true.  Sometimes it was actual work, other times it was a brainstorming session, and other times it was to gather an unofficial panel to give feedback.  As I have traveled, I have left a trail of amazing women, whom I call dear friends, who have inspired me as I start my own business.


I have fears, as one does... about financial commitment, about where, about when, about someone else stealing my idea in the same area.  But I also have A LOT of excitement about having my own shoppe, and collaborating with other creative souls.

I attempted to make hearts out of carrots for Soleil's soup (another pinterest idea).  It is harder than it seems!

Another pinterest recipe, and a total hit!! It is the bread that you mix up the day before andpop into a hot Le Creuset type pot the next morning.  It was PERFECT.

Traveling Abroad with Little Kids Part 1

As many of you know, we used to live in England, and now live in Virginia.  We have traveled back and forth from the UK to the US several times, but I feel like I learn something new with every experience.  We went back to the UK for a  visit this December, and I thought I would share a few tips with you:)

For this trip, we were going straight to Bath from London, with 2 little kids in tow.  We also would be shlepping our own luggage with us from the plane to the tube to the train to the taxi, to finally arrive at our friends' home.  Our luggage configuration was:

  • One 29" bag for most of our clothes for all 4 of us. (We used Space/Travel Bags within the big bag to save space and to keep things easy for everyone to find their things.)
  • One small rolly bag, able to be pulled by 8 year old.  (This brought gifts and returned home with things we bought while we were there.)
  • Two LARGE backpacks, the kind you use for hiking
  • One backpack, the biggest that an 8 year old could handle
  • Pack and play
  • Stroller/Buggy
Paul carried the large bag, the pack and play, and the biggest backpack.
I had Soleil in the stroller and a backpack.
Tate had the smallest backpack and the rolly and a stuffed penguin. (LOL)

As far as WHAT we packed, I have a few tips.  

  • Extra clothes in the bag you bring on the airplane.  ALWAYS BRING THESE. There is a funny story about this, but I don't want to embarrass Tate.  Let's just say he now owns some British Airways First Class PJs, and knows NOT to eat lots of pizza before a flight when you are lactose intolerant.  

  • Snacks.  Lots of them.  Instant Oatmeal weighs nothing and is perfect when you child doesn't like the chicken curry he is served.  All you need in a little hot water, and his belly is full!  PB crackers, nuts & dried fruit, dry cereal, goldfish crackers, fruit, carrots, a little chocolate, pretzels. 

  • A small DVD player or computer and extra kids movies.  We have had 2 different flights in which someone's TV on the airplane was not working, and that TV is ESSENTIAL to making it through 8 hour flights.  Also, many times the movies on the flight are not appropriate for preschool aged kids, so it is nice to bring those movies with you.   



  • About the above list:  The mask is perfect for getting the little one to sleep in the plane.  The natural oil is great for refreshing without disturbing someone who might have allergies to perfume nearby, baby wipes are essential for any travel, as is the hair tie.   
  • Makeup:  The brands I listed above are great.  They flake off instead of rub off, so you can wear makeup and not look like a raccoon when you have rubbed your eyes 7.5 hours later.  The mascara is the "tubes on the lashes" kind, and the eyeliner is the same.  I recommend mineral foundation as well, which you can sleep in.  Yes, I am vain, I wear makeup in every situation.  ....Even at the gym and whilst in labor. 
  • Good instant coffee:  If you aren't at an espresso bar in England, you will get really nasty instant coffee.  I think this starbucks instant is a pretty good, and with the jetlag, you will need coffee!
  • Water Bottles:  Fill after security.  Drink a lot.  This really helps with jetlag, even if you have to pee 5 times during the flight. 
  • Small blanket that rolls tightly to fit in backpack.  It makes your kiddo feel extra snuggly.
  • Many small little inexpensive toys, wrapped in tissue.  When Tate was little, I used to pack 8 of these, one for every hour.  This time, I had a few for each kid, and they came in handy on the train.

Loving PROJECT LIFE

I know I am not the only one has been scrapbooking slump.  Over the past few years, I have heard over and over again "I used to scrap all the time, but I just stopped."  I was the same.  However, I have been reinspired.  And funny enough, many of those folks who felt the same way I did, are reinspired as well.

Have you seen PROJECT LIFE?


You slide your pictures into these cool page protectors (all different types), and you also can slide little cards of patterned paper in as well.  You can add stickers (or not!),  add journaling (or not!), and be done with a lot of scrapbooking in a short amount of time, while still using some creativity.  For the 3x4 prints, I used Persnickety Prints.

I started using up my paper stash, which was awesome.  I cut up the different patterns into 3x4 and 4x6, which you can use in the PROJECT LIFE protectors.  I, actually, discovered the SNAP! system, which is basically the same thing, but cheaper quality and some small albums.  I tried am working on a SNAP! album as a trial, but I am already hooked, so I will be moving on to a PROJECT LIFE album soon.

Now the other cool part of the system, is the philsophy of PROJECT LIFE.  It is about scrapbooking the little stuff that happens in your daily routine.  When you look back, you will see what life was like at this time, not just at celebrations and special times, but in the every day.

Organizing the supplies has almost been as fun as scrapbooking itself.  I love all the little stacks of uniform cardstock in all sorts of patterns.  I have seen organizers online for up to $75.  This one was from TJMaxx, and was $9.99.  I love that it is portable!

2014

I am really excited for the upcoming year!
We have a lot of changes coming up, and the biggest one being is that we are moving AGAIN.  But for the last time!!!  I am very ready to dig in, grow roots, and settle.
My word of the year is:
ORGANIZED CALM

Yes, it is 2 words, but I need both.  With all the things we have coming up, I need to be very organized, and with that comes the calm.  And I have to calm in order to plan things out well.  I want to make this transition as easy as possible on the kiddos.

Things I am doing for 2014:
1.  Organizing my Bloglist.  Putting my faves at the top of my toolbar, deleting obsolete links
2.  Using checklists that I found on Pinterest.  Search "Home Organization Checklist"

  • Monthly Calendar
  • Weekly Calendar
  • Weekly Meal List w/ grocery list
  • Weekly Cleaning List
  • Weekly Blog Schedule & Ideas

3.  Clearing out Cloth Napkins (which we use daily)--getting rid of the most used set.  They are pretty grubby.
4.  Taking Better (unwanted) clothes to consignment, donating the remainder.
5.  Scheduling daily quiet time.  (Probably the most important)
6.  Reducing screen time for me.

Cold Weather means Warm & Cozy Food.

My recipes are usually simple, with the ingredients listed in order of use.  Message me if you want more detail, I am happy to help!

So easy, so satisfying, ate it for breakfast because I was out of oatmeal. 



 This was one of the rare times that I didn't use the McCormick packet.  It was SO MUCH BETTER.

1. Marinate Top Sirloin with Worcestershire Sauce, Soy Sauce, S&P
2. Olive Oil+Butter+ Top Sirloin.  Brown meat, set aside
3. Onion+Mushrooms+more S&P+Tarragon+a little water (to cook mushrooms through).
4. Add Meat back into pot.
5. Cream of Mushroom Soup+1/2 Cup Water+ Squirt of Ketchup (Trust Me!)
6. Simmer until Meat is tender and cooked through.  (I cooked for 40 min, but doesn't need to.)
7. Finish with scoop of Sour Cream.
8.  Serve over Noodles.


Best Leftover Turkey Ever.

1.  Olive Oil+Butter+Onion+Carrots+Celery (cook until starting to soften.)
2.  TBS of Flour+Leftover Turkey+S&P+Poultry Seasoning+Splash of Wine
3.  Chicken Broth+1/2 Milk (Bring to Boil, then simmer to thicken)
4. Leftover Rutabaga (optional)+Cooked Cheese Ravioli
5.  Finish with Chicken Bouillon to Taste.  You could also add cream, if you want thicker.

I fill the leftover soup into these jars, leftover from Bonne Maman Jam, which is my favorite.  They freeze well and hold just the right amount of soup for cold days:)

Christmas Break Fun Time

I like to set an activity for the kiddos on a regular basis because:
1.  They love it. 
2.  It makes life easier on me.
3.  It's fun.
3.  It prevents them from being on TV, which reinforces #2. 

 Mostly, I steal ideas off pinterest, or I just put out what I have in season colors and themes.  Here are some ideas to make your Christmas Break just a little more fun.

Styrofoam balls+toothpicks+buttons+mini marshmallows
 Prebaked Gingerbread House.  I like Wilton's brand better than the other brands out there.

 Tate rolling fondant.  It was like Cake Wars in my house. 

Gel pastels+watercolor+stickers+thick paper.

It is unseasonably warm here, so when Tate asked to go play in the rain, I said yes.  Notice the sled, even though it is 75F.

Easiest Lunch Ever:  Get a cute little stand (this one is from Ikea) and fill it with fruit, veg, carbs & Protein.  They love that is like a big snack.

And a Christmas tradition, we had the kids get ready for bed, and then we surprised them with going to see the Christmas Lights (at Norfolk Botanical Gardens).  
I packed cookies and cocoa and had it waiting in the car.

Book Club of ONE

I'm reading this book.  Ok, I'm not reading, I'm listening to an audiobook.  These get me through long drives and flights, and I downloaded it for my recent trip to England.  I didn't get to it until after the trip, because my 3 year was a TRAVELING ROCKSTAR and I could actually watch multiple movies on the flight.  

This book is hilarious.  Mindy Kaling holds on to her inner teeny bop ways, while being an adult, and doesn't apologize for it.  I love her and am secretly a little bit like this as well.  I love clothes and stickers and celebrity gossip and shopping.   I am also capable of an intelligent conversation about a multitude of subjuects, but that doesn't mean I can't enjoy the more fluffy things of life:) 
On a more serious note, this book was really, really good as well.  Defintely a more serious subject, as it is about a slave that escapes and is recaputured in the precivil war south.  I find myself thinking about Joanna, the main character, all the time as I go about my daily routine.  It makes me extremely grateful, as well as in awe of the women of that time.

 This is one of my favorite Christmas books.  It is themed around baking ( LOVE!) but each page is a different little lesson for your child, such as kindness and compassion.  Full disclosure:  Soleil doesn't love this book.  I want her to, but she would rather read Berenstain Bears Nutcracker.

And finally, a recommendation for an 8 year old.  This book is written comic book style by a guy with an awesome imagination.  The 26 story treehouse is the 2nd book, and Tate asked Santa for it this year.

Veggie Meal & Gift Bags

Yes.  This feels nice.... I won't go on and on regarding the last post, but I will say that
1.  It was hard to stay off FB.
2.  I did REALLY enjoy blogs that I went to yesterday.
3.  Blogging is a little bit about carving time out for yourself, which is great.

Right now, it is me and a cup of coffee and my computer, and the kids are reading Christmas books together before we walk to school.  :)  This is awesome.

Now on to today's post....

I was craving white beans.  Here is a very simple, veggie recipe that is quick and delicious.
Carrots+green onion+celery+mushrooms+a little oil+salt&pepper.  Sautee until starting to soften.
 Then add broth.  (I used chicken, obviously NOT vegetarian, but what I had.)   And then add canned white beans and more seasoning of your choice.  I used garlic powder, salt and pepper.
 Cook until warmed through, veggies are a little soft, and more of liquid has bubbled away.  I sometimes add more broth at the end so that it is more like a soup.

 And I made these for my friend, Kat Knupp.  She inspires me to be a better environmentalist each day:)  I stitched up fabric like long pillow cases, with hemmed edges.  I then attached a ribbon to the back, to be tied around the middle after it has been filled.  The middle bag was made drawstring style, which I like the best.  Also, that one is made from felt because I LOVE FELT.  (I have a slight felt addiction.)  You can pull on the ribbons on the side and pull, and the contents will be secured inside.
I hope to make more of these before the holiday season is over!  xo cat
